Zucchini and Oatmeal Bake

Preheat the Oven:
Preheat Oven: Preheat your oven to 180°C (360°F).
Prepare the Zucchini:
Grate Zucchini: Grate the zucchini using a grater or food processor.
Salt the Zucchini: Sprinkle some salt over the grated zucchini and let it sit for about 10 minutes. This helps to draw out excess moisture from the zucchini.
Squeeze Moisture: After 10 minutes, squeeze out any excess moisture from the grated zucchini using a clean kitchen towel or paper towels.
Prepare the Mixture:
Combine Ingredients: In a mixing bowl, combine the grated zucchini, oatmeal, grated cheese, eggs, pepper to taste, and chopped chives. Mix everything together until well combined.
Bake the Dish:
Prepare Baking Dish: Grease a baking dish or tray with oil or line it with parchment paper.
Spread Mixture: Spread the zucchini and oatmeal mixture evenly into the prepared baking dish or tray.
Bake: Bake in the preheated oven for about 20 minutes or until the edges are golden brown and the mixture is set.
Optional Cheese Topping:
Add Cheese: After 20 minutes, carefully remove the baking dish from the oven. Optionally sprinkle some extra cheese on top for added flavor.
Continue Baking: Place the baking dish back in the oven and continue baking for another 10 minutes or until the cheese is melted and bubbly.
