Tortellini with Cheesesteak in a Creamy Provolone Sauce

Prepare the tortellini by cooking it.

Prepare the tortellini following the instructions on the package until they are firm but not overcooked. Drain the food and mix it with 1 tablespoon of olive oil to avoid it sticking. Put aside.

Make the cheesesteak filling: In a big pan, warm 1 tablespoon of olive oil on medium-high heat.

Put the cut beef, onion, and green pepper. Cook while stirring often until the meat is brown and the vegetables are soft. Add salt and pepper to taste. Put aside.

Prepare the provolone sauce: In a pot, melt butter on medium heat. Mix flour into the mixture to make a roux. Slowly pour in milk while stirring constantly to avoid clumps.
Keep cooking until the sauce becomes thicker. Lower the heat and mix in shredded provolone cheese until it melts and becomes smooth. Add salt and pepper to taste.

Mix the cooked tortellini, cheesesteak filling, and provolone sauce in the skillet. Serve. Gently mix the tortellini and filling with the sauce until everything is evenly coated.

Heat thoroughly, then serve right away, topped with more provolone cheese if preferred.
