1. **Preparation of Fish :**
– Rinse the whole fish with cold water and dry it with absorbent paper.
– Make diagonal cuts on both sides of the fish to allow the flavors to penetrate.
2. **Preparation of sauce :**
– Finely peel and mince the garlic.
– Squeeze the juice of the lime.
– Thin the red peppers.
– In a bowl, mix lime juice, minced garlic, red peppers, fish sauce, sugar and grated ginger.
3. **Steam cooking :**
– Place the fish in a steam basket or on a heat resistant plate.
– Pour the prepared sauce over the fish, making sure to cover the inside and outside well.
– Add kaffir lemon leaves around the fish if you use them.
4. **Steam :**
– Steam the fish for about 15 to 20 minutes, depending on the size of the fish. It must be opaque and detach easily at the fork.
5. **Garnish :**
– Finish the green onions and roughly chop the fresh cilantro.
– Once the fish is cooked, garnish it with green onions and coriander.
6. **Service :**
– Serve the hot fish, accompanied by jasmine rice for an authentic Thai meal.
