Ingredients:
- 500 g spinach

1 red onion, chopped -
2 cloves of garlic, minced
3 eggs
120 ml milk -
150 g flour
Salt and pepper to taste - Optional: chili pepper, chopped
- 200 g Greek feta cheese, crumbled
- 100 g grated mozzarella cheese
- Fresh parsley, chopped
Directions:
Preheat the Oven:
Preheat your oven to 180°C (356°F).
Cook the Vegetables:
Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is soft and translucent.
Add the spinach to the skillet and cook until wilted. If using, add the chopped chili pepper for a bit of heat. Season with salt and pepper to taste. Remove from heat and let cool slightly.
