1. In a medium bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
2. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
3. In serving glasses or bowls, layer red velvet cake crumbles, cheesecake filling, and crushed Oreo cookies.
4. Repeat layers until glasses are full.
5. Top with mini chocolate chips if desired.
6. Chill in the refrigerator for at least 2 hours before serving.
