Pork chops with caramelized onion sauce

Season the pork chops generously with salt and pepper on both sides.
Sear the Pork Chops:
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the pork chops and sear for about 3-4 minutes on each side, until golden brown. Remove the pork chops from the skillet and set them aside.
Cook the Onions and Garlic:
In the same skillet, add the sliced onions. Cook for about 5 minutes, stirring occasionally, until they are softened and start to caramelize.
Add the minced garlic and cook for another minute.
Make the Sauce:
Pour in the chicken broth and apple cider vinegar (or white wine). Stir well, scraping up any brown bits from the bottom of the skillet.
Stir in the Dijon mustard and honey (or brown sugar), and bring the mixture to a simmer.
Simmer the Pork Chops:
Return the pork chops to the skillet, nestling them into the onion mixture.
Cover the skillet and let the pork chops simmer in the sauce for about 15-20 minutes, or until they are cooked through and tender.
Finish and Serve:
Once the pork chops are cooked, remove them from the skillet and set them aside on a plate.
Continue to simmer the sauce until it thickens slightly, if needed.
Spoon the sauce and onions over the pork chops and garnish with fresh herbs.
