Four servings
4-Tortillas with little carbohydrates
– 1 cup of chicken breast, cooked and shredded
– Half a cup of pesto sauce, either handmade or purchased
Two quarters of a cup of chopped sun-dried tomatoes and half a cup of shredded mozzarella cheese
– A quarter cup of finely chopped spinach
Adjust seasoning with salt and pepper according to your preference.
What to do:
1. On a level, clean surface, spread out the low-carb tortillas. To avoid any leakage, spread a thin layer of pesto sauce over each tortilla, being sure to leave a tiny border around the borders.
2. After pesto sauce has been spread out, evenly divide the shredded chicken breast on top.
Third, mix the chopped spinach, sun-dried tomatoes, and shredded mozzarella cheese with the chicken. Toss in some pepper and a touch of salt.
4. Starting from one end and rolling to the other, carefully roll each tortilla into a cylinder shape.
5. After rolling the tortillas, cut them into 1-inch pieces for the pinwheels. Use toothpicks to secure if needed.
Saute in an air fryer set to 400 degrees Fahrenheit for about 7 minutes. Here is your meal!
Adaptations and Hints: – You may modify the recipe to suit the tastes of anybody in your family who is fussy about what they eat. Swap out the spinach with basil leaves, or use a different cheese if they’re not a fan of mozzarella.
– A To give the pesto sauce a little more heat, add some crushed red pepper before spreading it over the tortillas.
A Use homemade pesto that is prepared with olive oil, garlic, pine nuts, parmesan cheese, and fresh basil if you want to make it particularly low carb.
– A You can make these pinwheels in advance and keep them in the fridge in an airtight container. They are great for meal prep or to bring to parties.
– A If you’re feeding a big family or just want more, feel free to double the recipe. Be prepared for them to go quickly!
