The Recipe for Long John Silver’s Batter
What you need:
Oil from vegetables (to fry): 8 cups
Useful in Any Situation 2-Cups of flour
Half a cup of cornstarch
2-Tspoons of Sugar
2-Tspoons of Salt
Half a teaspoon of baking powder
A half teaspoon of baking soda
The onion One and a half teaspoons of salt
A half teaspoon of paprika might be used.
A quarter teaspoon of ground black pepper
Cola: 16 fluid ounces
Two pounds of cod or white fish, diced into three-ounce portions
Recipe Directions:
Get 8 cups of vegetable oil, either in a fryer or a heavy saucepan, heated to 350°F.
Gather all the ingredients in a bowl: flour, cornstarch, sugar, salt, baking soda, onion salt, paprika, and black pepper.
When the batter begins to froth, slowly add the club soda while whisking constantly to the dry ingredients.
Coat the fish pieces evenly by dipping them into the batter.
Gently drop the fish covered in batter into the heated oil. Cook for two or three minutes, or until the fish floats and the batter becomes golden.
Transfer the fish to a wire rack to drain.
Cooking Tip: Hold the fish momentarily in the oil to develop a crust before removing it to avoid batter sticking.
Substitute beer for the club soda for an added zing of flavor.
