Although green beans and bacon go together like clockwork, there’s one more little hidden ingredient that makes them even better: the oven. Green beans have a lovely caramelized flavor when they are roasted. You’ll fry just enough bacon in this recipe to have the fat necessary to cook your beans, but you may want to save some bacon grease for each time you cook a couple pieces for breakfast. The thick, smokey fat adds a delightful depth to eggs or chicken.

Half a pound of bacon, two pounds of string beans, and one chopped or frenched white onion
