Homemade Herb-Infused Cheese Crackers

Get the dough ready: Turn the oven on to 375°F, or 190°C. Mix the flour, baking soda, salt, and sugar in a large mixing basin until well combined. To ensure uniform distribution, make sure the dry components are well-integrated.
Add the Cheeses: To the flour mixture, add the shredded parmesan and cheddar cheeses. Coat the cheeses equally with flour by tossing them in it.
Add the Herbs: Mix in the finely chopped thyme leaves and rosemary. Your crackers will get a flavour boost and a lovely scent from the fresh herbs.
Combine the Wet Ingredients: Just stir the buttermilk into the dry ingredients if using it. Before adding the milk and vinegar to the dry ingredients, combine the two and let it settle for a few minutes. Mix the ingredients until a dough forms.
Knead and Roll: Place the dough onto a surface that has been lightly dusted with flour, and work it gently until it comes together. Press the dough to a thickness of about 1/8 of an inch. Your crackers will be crispier if the dough is thinner.
Cut the Crackers: To create the appropriate cracker shapes, cut the dough using a knife or cookie cutter. Traditional square crackers may be made, or you can experiment with other forms.
Bake: Spread the crackers out on a baking pan covered with paper. Put the crackers in the oven that has been prepared and cook for 12 to 15 minutes, or until they are crisp and golden brown. Keep a tight eye on them to make sure it doesn’t grow too dark.
After taking the crackers out of the oven, allow them to cool on a wire rack before storing them.
