1. Quinoa Salad with Avocado and Black Beans
Ingredients:
1 cup quinoa, rinsed
2 cups water
1 can black beans, drained and rinsed
1 avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
2 tablespoons olive oil
Salt and pepper, to taste
Instructions:
Cook Quinoa: In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool.
Combine Ingredients: In a large bowl, combine cooked quinoa, black beans, avocado, cherry tomatoes, red onion, and cilantro.
Dress Salad: In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over salad and toss gently.
Serve: Serve chilled or at room temperature.
2. Baked Salmon with Roasted Vegetables
Ingredients:
4 salmon fillets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1 bunch asparagus, trimmed
2 bell peppers, sliced
1 red onion, sliced
