Directions:
Cookie Base: Preheat oven to 170ยฐC (325ยฐF). Line an 8-inch springform pan with parchment paper. Press 3/4 of the cookie dough into the pan. Bake for 20 minutes; allow to cool.
Cheesecake: Beat cream cheese, sugar, vanilla, salt, and heavy cream until fluffy. Add eggs one at a time. Fold in 1/2 cup chocolate chips. Pour half the mixture into the pan, dot with remaining cookie dough, add the rest of the mixture, sprinkle with chocolate chips, and bake in a water bath for 2 hours.
Whipped Cream: Whip heavy cream with vanilla bean paste until stiff peaks form.
Decoration: Once cooled, transfer cheesecake to a plate, pipe whipped cream on top, and decorate with halved and chopped cookies and chocolate chips.
