Cinnamon Sugar Cookies

Gradually blend in the dry ingredients until well incorporated.
In a small bowl, mix the ground cinnamon with the ¼ cup granulated sugar. Roll dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.
Place the cookies 2 inches apart on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
Once cooled, dust the cookies with powdered sugar using a fine-mesh sieve.
