### Chicken Stew Recipe

**Ingredients:**

– 2 lbs (900g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
– Salt and pepper, to taste
– 2 tbsp olive oil
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 3 medium carrots, peeled and sliced
– 2 celery stalks, chopped
– 3 medium potatoes, peeled and diced
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 bay leaf
– 4 cups chicken broth
– 1 cup frozen peas
– 2 tbsp all-purpose flour (optional, for thickening)
– 2 tbsp fresh parsley, chopped (for garnish)

**Instructions:**

1. **Prepare the chicken:** Season the chicken pieces with salt and pepper.

2. **Sear the chicken:** In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces in batches and cook until browned on all sides, about 5-7 minutes per batch. Remove the chicken from the pot and set aside.
