2 cups of fresh blueberries

2 cups of all-purpose flour, divided into two portions. 1 cup of sugar, plus an additional tablespoon.
1 big egg at room temperature
1/2 cup of buttermilk
1/2 cup of soft unsalted butter (1 stick)
2 tablespoons of grated lemon peel 2 teaspoons of baking powder
1 and a half teaspoons of vanilla extract 1 teaspoon of salt
You can add a little bit of cinnamon if you like.

How to Prepare Blueberry Buttermilk Breakfast Cake

Heat the oven to 350º F and lightly grease a 9×5-inch baking dish with butter or non-stick spray.
Put blueberries in 1/4 cup of flour until they are covered, then leave them to the side.

In a big bowl or with a mixer, mix butter, sugar, and lemon peel until fluffy and lighter in color, for about 3-5 minutes.
Mix the egg well, then add the vanilla extract.
In another bowl, mix the rest of the flour with baking powder, salt, and cinnamon, if desired.
