Better than chips! Crispy fries and cheese sauce

Peel and wash the potatoes carefully to remove the starch.
Cut the potatoes into sticks and boil them for 5 minutes.
Soak the potatoes in cold water with a teaspoon of salt for 30 minutes.
Drain the potatoes and let them dry.
