Instructions:

  1. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the beef stew meat in batches until well-seared. Remove and set aside.
  2. In the same pot, add diced onions and minced garlic. Sauté until onions are softened.
  3. Deglaze the pot with red wine (if using), scraping up any browned bits from the bottom.
  4. Add tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Stir to combine.
  5. Return the seared beef to the pot, and pour in beef broth. Bring to a simmer.
  6. Add carrots and potatoes to the pot. Simmer on low heat for 1.5 to 2 hours or until the beef is tender and the vegetables are cooked through.
