Baklava Rolls

Preheat oven to 350°F. Brush a sheet of phyllo dough with melted butter, layer another sheet on top, and repeat until you have 3-4 layers.
Sprinkle a mixture of chopped nuts and cinnamon over the dough. Roll tightly and place on a baking sheet. Repeat with remaining dough.
Bake for 25-30 minutes until golden.
In a saucepan, combine honey, water, sugar, and vanilla. Bring to a boil, then simmer for 10 minutes. Pour syrup over baked rolls.
