Prepare the Avocado Spread: In a medium bowl, mash the avocados with a fork until smooth. Stir in the lemon juice, salt, and pepper.
Assemble the Toast: Spread a generous amount of the avocado mixture onto each slice of toasted bread.
Add the Lox: Top each slice with smoked salmon.
Garnish: Sprinkle the thinly sliced red onion, capers, and fresh dill over the lox. Drizzle with a little olive oil and, if desired, sprinkle everything bagel seasoning on top.
Serve: Serve the avocado lox toast immediately, garnished with lemon wedges.
