Ingredients:

Egg: 1 pc
Salt: a pinch
Vanilla sugar: 8 grams
Sugar: 60 grams
Oil: 50 ml
Cornstarch: 2 tablespoons
Yogurt: 2 tablespoons
Baking powder: 1/2 teaspoon
Flour: 250 grams
Apricot jam: 160 grams
Coconut flakes: 2 tablespoons
Powdered sugar (for garnish)
Directions:

Preheat the oven: Preheat your oven to 180°C (356°F).
Prepare the dough:
In a large bowl, whisk together the egg, a pinch of salt, vanilla sugar, and sugar until well combined.
Add the oil, cornstarch, and yogurt, and mix until smooth.
Sift in the baking powder and flour, mixing until a soft dough forms.
Shape the dough:
Press the dough evenly into a greased or parchment-lined baking dish (approximately 20×20 cm).
Add the filling:
Spread the apricot jam evenly over the dough.
Sprinkle the coconut flakes on top of the jam layer.
