In the mood for some traditional German comfort cuisine? Traditional German potato pancakes, or reibekuchen, are the way to go. Perfectly simple to whip up in the comfort of your own home, with a crisp outside and a fluffy, tender within. These fried potato pancakes are so meaty they will make you feel like you’re in a picturesque Christmas market.
We used to make potato pancakes all the time when I was a kid. With tangy quark (German fresh cheese) or applesauce, my mutti (mom) would whip up large quantities of these golden, carbohydrate delicacies, which we would eat hot. It was a miracle to see her grate the potatoes and cook them until they were perfectly crispy.
Here we use freshly grated raw potatoes for the original form of reibekuchen, which is sometimes argued to be different from kartoffelpuffer, which is often prepared using cooked potatoes or leftover potato dumplings. It’s the original, time-honored method of savoring the hearty tastes of the “peasant food” that became famous in Germany.
