Here’s a simple and fast recipe for a **Sugar-Free Jam** that’s perfect for a delicious breakfast. This jam uses the natural sweetness of fruits, along with a hint of lemon juice and chia seeds to thicken, making it a healthy alternative to traditional jams loaded with sugar. You can make this with your favorite fruit, such as berries, peaches, or apples.

### Sugar-Free Jam Recipe

**Ingredients:**

– 2 cups fresh or frozen fruit of your choice (e.g., strawberries, blueberries, raspberries, peaches, apples)
– 2 tablespoons chia seeds
– 1 tablespoon lemon juice
– 1-2 tablespoons water (if needed for consistency)
– Optional: 1-2 tablespoons of a natural sweetener (such as honey, maple syrup, or stevia) if you prefer a slightly sweeter jam

**Instructions:**

1. **Prepare the Fruit:**
– If you’re using fresh fruit, wash and chop it into small pieces. If you’re using frozen fruit, let it thaw slightly.

2. **Cook the Fruit:**
– Place the fruit in a medium-sized saucepan over medium heat. Stir occasionally and cook until the fruit starts to break down and release its juices, about 5-10 minutes. If the fruit is too dry, add 1-2 tablespoons of water to help it soften.

3. **Mash the Fruit:**
– Use a fork or a potato masher to mash the fruit to your desired consistency. If you like a smoother jam, you can also use an immersion blender.

4. **Add Lemon Juice and Chia Seeds:**
– Stir in the lemon juice and chia seeds. The chia seeds will help thicken the jam as it cools. If you’re using a natural sweetener, add it at this stage and mix well.

5. **Simmer and Thicken:**
– Reduce the heat to low and let the mixture simmer for about 5 minutes, stirring occasionally. The jam will start to thicken as the chia seeds absorb the liquid.

6. **Cool and Store:**
– Remove the saucepan from the heat and let the jam cool for 5-10 minutes. As it cools, it will continue to thicken. Taste the jam and adjust the sweetness if needed.
– Once cooled, transfer the jam to a clean jar or airtight container. Store in the refrigerator for up to 1 week.
