Ingredients:

1.5 lb Creamer potatoes, any varietal (by The Little Potato Company)
4 large carrots, peeled and sliced diagonally, 1cm thick
1/3 cup unsalted butter, melted
1 tablespoon minced garlic
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
Fresh parsley for garnishing, as desired

Directions:

Preheat your oven to 400°F (200°C).
Halve the Creamer potatoes and place them in a large bowl with the sliced carrots.
In a small bowl, whisk together the melted butter, minced garlic, dried parsley, salt, dried thyme, and black pepper.
